My brother Stefano and I have been farming grapevines since 1992 on our own land in the hilly region in the town of Marano, Valpolicella, San Pietro in Cariano and Negrar. We take care of our wines throughout the entire production chain, from the vineyard to the cellar to the delivery customers. Our winery is near our house; on the first floor you will find the local for drying grapes, a fundamental process for the production of Amarone and Recioto. That?s why the grapes are before accurately sorted manually then placed to rest in small boxes until and the pressing in January. At ground level there is the warehouse which is also destined for bottling. Outside there is a large porch where you will find a modern conception of fermentation for wine making. In the basement there is the processing area with steel tanks and a reserved area for the ageing with barrels and barriques.
VINEYARDS
The Antolini vineyards cover a total surface area of 9 hectares. From the beginning we have always chosen to respect the environment using special guidelines using the minimum amount of antiparasitic products. The composition of their land is prevalently clayey, this is good for the vines because the clay holds the water which in turn slowly releases into the roots, which means there is no need to have an irrigation system. Another favourable climatic factor consists in the high temperature range compared between day and night, important to obtain particularly fragrant wines which have a complex bouquet. The technical system used is of a traditional nature which is used within this area, this means a double bower with an arched method; 1 x 4, this means an average distance of 4 metres between rows, which are set up on the "marogne", characteristically forming marvellous balconies where olives and cherries can find a place. "Moròpio" and "Persegà" vineyards can be found in the hilly town of Marano Valpolicella. The first one is at an altitude of 350 m and it extends for 2,2 hect. and is exposed towards the south-east. The vines were planted in the 70's and are only renewed if they become withered and die. The cultivating system used is traditional with rows planted on the "marogne". "Persega" is exposed to the west and destined to the production of Recioto. "Ca' Coato" was bought in the year 2000 in the town of Negrar. It was unkempt, but at one time was cultivated for vines. With an enormous workload the old dry walls were restructured and roughly 2 hect. of land was cultivated with variety of vineys typical to the Valpolicella region using the Guyot method. The exposure varies from south to west and the altitude is between 170 and 220 m. From 1993, in "Semonte" which lies in the town of San Pietro in Cariano we have cultivated 1,5 hectare of vineyard at an altitude of 150 m.
